Ever since I became a mother, time is proved to be very valuable. This resulted in me finding quick ways to prepare meals but to not compromise taste and health. Since I already posted Foil Packet Meals, this is another quick way cook healthy meals. Literally just throw everything on a pan, bake and there you go!
What I did differently with this one is I marinated the chicken (I cooked skinless boneless thighs) the night before just so the chicken has some really good flavour when it’s time to roast in the oven. Unfortunately, I don’t really have any measurements as to the marinade I used so I apologize that I can’t provide that for you. If you are curious as to what ingredients I did use, you are welcome to ask me and hopefully you can figure out what ratios of those ingredients works for you!
So I dont really think I needed to put up a formal recipe card for this one. I think it’s pretty plain and simple that I put everything on a baking pan and threw it in the oven. The only thing to watch for is cooking time. My usual staple is 400°F for about 20 minutes with 5 minute increments if you need more time. If you are cooking chicken and want it more on the tender side, I usually put the rack lower in the oven (second last rack). I usually use this method even cooking bone-in chicken so it’s not dry and only burnt on the top.
This is also great for meal preps which I like to do for my husband. I cook enough for about 3 days at a time just so the veggies can still be good to eat and flavour won’t be lost in the chicken. It’s fast and convenient so you won’t have to worry about cooking lunch for the next day.
That’s why I love cooking so much. It’s like an art. Each artist can make their own version of a piece and like how beauty is in the eye of the beholder, it parallels to taste. You can create your own meal according to your tastes and cook how you like it!
