This is the start of a new segment for me called appropriately, FEATURED RECIPES. This where I try out recipes I find online that I think would be really good to try!
The first ever feature recipe of Shar’s Food Adventures presents SLOW COOKER CABBAGE ROLL SOUP from the great site Spend With Pennies. You can click on the link to get to her original recipe of the cabbage roll soup.
My mom makes really good cabbage rolls but she does not make it too often as it’s quite time consuming for her and only makes on special occasions or on special requests from my husband because it’s one of his favourites. I, surprisingly, never asked her for her recipe as I guess, I don’t have much time either to make time-consuming meals. Being that I am always looking for quick and easy meals, I came across this recipe and decided to give it a try because I am a HUGE fan of slow cooker/crock-pot cooking.
Now, of course, this is by all means quick in terms of how long it actually cooks for, but it is quick in prep. Just get your ingredients ready and throw it all in the slow cooker. It’s an incredible bonus to be able to just throw things in a slow cooker, and leave it for a while so I can go and do other things. Also it’s another bonus that I was able to make something that is one of my husband’s favourites.
I did do a couple of changes to the original recipe. To make it more low-fat, I used ground turkey instead of ground beef. Also, while I was preparing this I realized I did not have any rice but I had some quinoa on hand. This was a better choice actually because my husband has been trying to cut down on eating so much rice lately (being Filipino and all haha). I also used chicken broth instead of beef broth and unfortunately I also did not have any Worcestershire sauce. To further add to the low-fat, I did not use bacon but it still turned out great!
I cooked it for 7 hours on low and boy, you can really see on my husband’s face how happy he was when he had his first sip. He was ecstatic and I think it’s safe to say that it was an instant hit. So it did not taste exactly like my mom’s but he said that it was still pretty close and still pretty damn good!

Slow Cooker Cabbage Roll Soup
Ingredients•1 large onion , diced
•3 cloves garlic , minced
•1 lb ground turkey
•2/3 cup uncooked quinoa
•6-8 cups cabbage , chopped
•1 can diced tomatoes
•1 can tomato soup
•2 tablespoons tomato paste
•5-6 cups beef broth
•1 1/2 cups vegetable juice
•1 teaspoon paprika
•1 teaspoon thyme
•salt and pepper , to taste
- Throw in all the ingredients in the slow cooker.
- Cook for 6-8 hours on low or about 3-4 hours on high.
